Fusilli Primavera Salad

Ingredients

  • 1 packet MITSIDES tricolore pasta (fusilli, conchiglie or pennette)
  • 3-4 red tomatoes
  • 3-4 small cucumbers
  • 1 fresh lettuce
  • A few capers
  • 3-4 gherkins
  • 3 tablespoons of piccalilli
  • 1 tin of sweet corn
  • 1 teaspoon dried mixed herbs
  • 4 tablespoons olive oil
  • 4 tablespoons vinegar
  • 2 teaspoons mustard powder
  • Salt, pepper

Method

  1. Boil pasta in plenty of salted water for 5-6 minutes. When cooked, strain under cold water and allow to cool.
  2. Cut tomatoes, cucumbers, lettuce and gherkins and add capers, pickles and mixed herbs. Strain and add sweetcorn.
  3. Add the pasta in the salad. Mix the olive oil, vinegar and mustard powder in the blender to form the vinaigrette sauce, and to the salad. Season with salt and pepper and serve.
