Pasta Caesar Salad

Ingredients

Ingredients:
  • ½ packet MITSIDES Conchiglie Grandi (Large shells) (250g)
  • 140g bacon rashers, finely chopped
  • 1 medium lettuce, torn
  • 2 hard-boiled eggs, coarsely chopped
  • 2 small avocados (400g), coarsely chopped
  • 40g parmesan cheese, shaved
Caesar dressing:
  • ¾ cup olive oil
  • 1 egg
  • 1 garlic clove, crushed
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 8 anchovy fillets, drained

Method

  1. Add pasta in a large saucepan of plenty of salted boiling water and boil, uncovered, until al-dente. Drain under cold running water and place in a large bowl.
  2. Meanwhile, fry bacon in a non-stick pan, stirring, until browned and crisp. Drain on absorbent paper.
  3. Add bacon to the pasta with the lettuce, hard-boiled eggs and avocado.
  4. Prepare the dressing by blending egg, garlic, lemon juice, mustard and anchovies in a blender or food processor, until smooth. With the motor running, gradually add olive oil until dressing thickens.
  5. Pour half the dressing over the pasta and toss to combine. Serve with the remaining dressing and parmesan flakes.
