Ingredients
- 1 zucchini, sliced in strips
- 1 Tbsp butter
- 2 ciabatta breads, sliced open.
- 2 cups Lettuce, chopped
- 200g leftover turkey
- 1 tsp Dijon mustard
- Some Parmesan shavings
- 1 tsp chives, chopped
For the dressing:
- 1 jar Mitsides Cacio e Pepe sauce
- 2 Tbsp Mayonnaise
- 1 Tbsp Dijon mustard
- 3-4 anchovies, finely chopped
- 2 Tbsp grated parmesan or pecorino
- Freshly ground pepper
Method
Preheat the oven to 180°C. Place the zucchini on a baking tray lined with parchment paper. Brush with a bit of olive oil, sprinkle with salt and bake in the oven until crispy. You can also leave the zucchini raw if you like. There are no rules!!
In a small bowl, mix all the dressing ingredients together.
To assemble the sandwich, heat the butter in a large frying pan and place the inside part of the ciabattas. Press with your hands so that the bread absorbs the butter. Let it get a bit crispy! Spread dressing on one side of the bread and the Dijon mustard on the other. Mix the lettuce with the remaining dressing and place on the sandwich. Top with the turkey, zucchini, parmesan shavings and chives. Close the sandwich with the top bread and press together.
