Ingredients
- ½ cup butter, softened, not melted
- ¾ cup runny honey
- 2 medium eggs
- 1 tsp vanilla extract
- 1½ cups Mitsides Plain flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- Mr. Beans Chocolate cream
Method
Preheat the oven to 160°C.
Line 2 baking trays with parchment paper.
In a bowl of a stand mixer, add the butter and honey and cream together. Mix in the egg and vanilla extract until well combined.
In a separate bowl, mix together the flour, salt, cinnamon and baking powder. Slowly add the dry ingredients to the wet ingredients, a little at a time and mix well.
Take a teaspoon and drop a spoon full at a time to the baking tray slightly shaping into cookies. Leave some space between the cookies as they will get bigger when baked. You should have about 20 on each baking tray.
Bake for about 12 minutes or until the outer edge of the cookie is golden brown. They will be soft. Remove from the oven and let them cool completely. Take a cookie, and spread some chocolate cream on its flat side. Take another one and stick it on to the chocolate cream to create a cookie sandwich.
