Ingredients
- 4 cups Portobello mushrooms, chopped
- 2 cups Mitsides Medium Beans, cooked and mashed
- 1 cup broccoli, finely chopped
- 2 small red onions, finely chopped
- 3 large eggs, beaten
- ½ cup panko breadcrumbs
- 1 tsp Mitsides Vegetable Powder
- 1 tsp paprika
- 1 tsp mustard powder
- 1 Tbsp Worcestershire sauce
- 1 garlic clove, minced
- ¾ cup Parmesan cheese, grated
- 2 Tbsp Olive oil
- Salt and Pepper
Method
Heat the olive oil in a large frying pan and add the onions and mushrooms. Season with salt and pepper and cook until all liquids have been absorbed. Empty into a large bowl and add the mashed beans, broccoli, garlic, Worcestershire sauce and seasonings. Mix well. Add in the beaten eggs, cheese and breadcrumbs and mix gently until combined. Form the mixture into burger patties. If the mixture is too wet, add more breadcrumbs.
You can cook these burgers in the oven, in a large skillet or in the air fryer.
If using a skillet, heat 2 tablespoons of olive oil and add the burgers. Cook for 2-3 minutes on each side until golden brown.
If using the oven or air fryer, spray the patties with some olive oil and cook for about 15 minutes until golden brown.
Serve in burger buns with lettuce and tomato and any dressing you like.
Note: Some Japanese style Mayo would make these burgers super special!
