Ingredients
- 1 cup Mitsides Plain Flour
- 1 cup strained yogurt
- 2 tsp baking powder
- ½ tsp Mitsides Vegetable Powder
- ½ tsp dry mint
- 1 cup halloumi, grated
- 1 zucchini, grated and strained
- 1 beaten egg, for brushing
- Sesame seeds
Method
Preheat the oven to 180°C.
In a large bowl mix together the flour, vegetable powder, dry mint and baking powder. Add the yogurt, grated zucchini and ¾ cup grated halloumi and mix until you have a sticky dough.
On a floured surface, place the dough and divide in 6 pieces. Form each piece into a round dough and with your finger make a hole in the dough and form a bagel. Place on a tray lined with parchment paper.
Brush each bagel with the beaten egg and add the remaining grated halloumi and sesame seeds.
Bake the bagels for about 20 minutes. Remove from the oven, let them cool and then slice open to add whatever fillings you like. We suggest two options, one with cream cheese and cucumber and one with cream cheese and sugar free apricot jam.
