Ingredients
- 1 pack Mitsides Linguine 500g
- 300g large prawns, cleaned
- 2 zucchini, cut in small cubes
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 garlic clove, minced
- ½ tsp turmeric
- ¼ tsp chilli flakes
- 1 Tbsp Mitsides Vegetable Powder
- 1 lime, juice and zest
- Salt and pepper
- Grated parmesan cheese for serving (optional)
Method
In a large deep sauté pan, heat the butter and olive oil. Add the zucchini with some salt and cook on all sides until lightly browned. Add the garlic, turmeric and chilli flakes. Add the prawns and vegetable powder and cook until prawns are cooked. Add the lime juice.
In the meantime, in a large pot with boiling salted water, add the pasta and cook until al dente. Reserve 1 cup of pasta water. Drain the cooked pasta to the sauté pan with the reserved pasta water. Add the lime zest, pepper and mix well.
Serve with or without grated parmesan!
