Ingredients
- 1 ½ cups Mitsides Semolina
- 2 Tbsp Mitsides All Purpose Flour
- 1 Tbsp Mitsides Vegetable Powder
- 1 Tbsp olive oil
- 1 small red onion, finely chopped
- 2 medium carrots, grated
- 1 small green bell pepper, finely chopped
- ¼ cup sweetcorn
- ¼ cup fresh coriander, finely chopped
- ¼ cup yogurt
- 1 cup halloumi cheese, cut in very small cubes
- 1 cup water
- 1 tsp baking soda
- 3 Tbsp lemon juice
- Salt & pepper
Method
In a large bowl mix the semolina with the flour and vegetable powder and set aside.
In a large frying pan heat the olive oil and add the onion , carrots, green pepper and sweetcorn. Season with salt and pepper. Sauté for 2 minutes and turn off the heat.
Add the vegetable mixture to the semolina mixture. Add the coriander, yogurt, halloumi and water and mix well. Sprinkle with the baking soda and then pour the lemon juice on top. It will slightly foam. Lightly mix again.
You can either cook the pancakes in a frying pan or in the air fryer.
If you choose the air fryer, line your drawer with parchment paper. Spoon some of the batter and place on the parchment paper, forming a small pancake with the spoon. Air fry for 10 minutes, flipping once halfway.
If you choose the frying pan, heat some olive oil in the pan, spoon some of the mixture and place it in the pan . Spread the mixture with your spoon to form a small pancake. Cook for 3-4 minutes until the bottom is crispy and then flip over to the other side and cook for another 3-4 minutes. Serve with yogurt!
