Ingredients
- ½ cup olive oil
- ½ cup peanut oil (or other vegetable oil)
- 1 cup fresh orange juice
- 4 cups Mitsides Plain Flour
- 2 tsp baking powder
- 1½ cups green olives, pitted and chopped
- 1 cup halloumi, cut in cubes
- 1 cup fresh coriander, finely chopped
- 1½ tsp dry mint
- 3-4 spring onions, chopped
- Sesame and anise seeds
Method
Preheat the oven to 170°C.
Soak the green olives in water to get rid of the excess salt. Drain and pat them dry.
In a large mixing bowl add the liquid ingredients (olive oil, peanut oil, orange juice), then add the olives, halloumi, coriander, spring onions and dry mint and mix. Add the flour and baking powder and mix well to get a hard dough.
Line 2 loaf tins with parchment paper (20cmX10cm). Divide the dough into the 2 tins and spread evenly using your hands. Wet your hand with some water and gently stroke the top of the dough. Sprinkle with some sesame and anise seeds and bake in the oven for 50-55 minutes.
