Ingredients
- 1 cup grated zucchini
- ½ cup grated carrot
- 1 shallot, finely chopped
- 3 eggs, beaten
- 1 tsp Mitsides Vegetable Powder
- ⅓ cup grated cheese
- 2 Tbsp Mitsides All-Purpose Flour
- A pinch of pepper
Method
Preheat the oven to 180°C.
Wrap both the zucchini and carrot in a clean towel and squeeze out all their juices.
In a bowl mix all the ingredients together.
Line a small baking dish with parchment paper. Pour in the mixture, add some more grated cheese on top and bake for about 15 minutes until the cheese has melted and become golden.
Remove from the oven, let it cool and cut in the desired shape and size.
