Ingredients
- 1 pack Mitsides Wholewheat Orzo (500g)
- 1 pack cherry tomatoes (500g)
- 1 whole garlic head
- 2 Tbsp cream cheese
- 1 tsp mixed herbs
- 1 Tbsp Mitsides Vegetable Powder
- 1 handful of baby spinach
- 10 basil leaves
- Olive oil
- Salt and pepper
- Grated parmesan or halloumi cheese
Method
Preheat the oven to 200°C.
In a large oven dish, place the cherry tomatoes, garlic head with skin on and the cream cheese. Do not mix. Sprinkle with the mixed herbs and vegetable powder and drizzle with plenty of olive oil. Cover with foil and place in the oven for 35-40 minutes.
Meanwhile, in plenty of salted boiling water add the orzo and cook following pack instructions. Once ready, drain and add a splash of olive oil to the orzo to avoid it from sticking.
Once the cherry tomatoes are ready, remove from the oven. Remove the garlic and add the orzo and spinach and shred the basil leaves on top with your hands. Mix everything together until the spinach has softened. Add salt and pepper if you like. Serve in bowls and add some grated cheese on top.
