Ingredients
- 4 cod fillets
- ½ tsp garlic powder
- 1 tsp Mitsides Vegetable Powder
- ½ tsp paprika
- ¼ tsp dried thyme
- ½ cup Mitsides All Purpose Flour
- 1 large egg, beaten
- 1 Tbsp Dijon mustard
- 1 Tbsp Mayonnaise
- 1 cup Panko breadcrumbs
- Some olive oil
- Salt & pepper
FOR THE MASH:
- 2 potatoes, cut in cubes
- 1 carrot, cut in cubes
- 1 cup Mitsides Medium Beans, cooked
- 1 small onion, chopped
- 5 Tbsp fresh cream
- 1 tsp Mitsides Vegetable Powder
- 1 Tbsp olive oil
- Boiling water
Method
First prepare the mash.
In a medium saucepan heat the olive oil. Add the onion, potatoes, carrots and cooked beans. Add the vegetable powder and cook for 2-3 minutes. Add some boiling water, just enough to cover the vegetables in the pan. Cook for 15 minutes until all veggies are soft and cooked. Remove any excess water, add the cream, salt and pepper and mash.
In the meantime, in a bowl mix the garlic powder, vegetable powder, paprika and thyme. Then, rub on the cod and set aside.
Set 3 deep plates as follows: Place the flour in the 1st plate, the egg mixed with the mustard and mayo in the 2nd plate and the panko breadcrumbs in the 3rd plate.
Dip the fish fillets first in the flour, then in the egg mixture and then in the breadcrumbs.
If using an air fryer, grease the bottom of the drawer and place the fish fillets in one layer. Spray with some oil. Cook for 15-20 minutes, flipping once halfway.
If you choose to cook in the oven, preheat the oven to 180°C, place the fillets on parchment paper, brush with olive oil and bake for about 20 minutes until cooked.
