Ingredients
- 2 packs Mitsides Vegetable Noodles
- 1 cup carrot, roughly chopped
- 1 Tbsp fresh ginger, grated
- 1 garlic clove, minced
- 1 Tbsp coconut oil
- ½ cup coconut milk
- ¼ tsp ginger powder
- ¼ tsp turmeric powder
- 1 tsp sesame oil
- 1 cup vegetable broth (boiling water with 1 tsp Mitsides Vegetable Powder)
- a pinch of chili flakes
- Fresh coriander leaves
Method
In a medium sized saucepan heat the coconut oil and sauté the carrot, ginger and garlic. Add the ginger powder, turmeric and chili flakes. Add the broth and cook until the carrots are cooked and soft. Turn off the heat, add the coconut milk, sesame oil and blend with a hand blender until smooth. Add the noodles in the carrot sauce and let them cook for 5 minutes. Serve with fresh coriander!
