Ingredients
- ¾ cup zucchini, grated
- ¼ cup carrot, grated
- ½ cup mature cheddar cheese, grated
- 1 egg, beaten
- 4 tbsp Mitsides All- purpose flour
Method
Preheat the oven to 180⁰C. Wrap zucchini and carrot in a clean kitchen towel and squeeze so that all their liquid comes out. Place in a bowl, add all remaining ingredients and mix well. Line a baking tray with parchment paper. Shape the mixture into small balls or whatever shape you like and place them on the baking tray, gently pressing them down with your fingers. Bake for 15 minutes until cheese has turned to light brown.
