Ingredients
For the pizza crust
- 4 florets broccoli
- 4 florets cauliflower
- ½ cup Mitsides Semolina
- 3 eggs, beaten
- 1 cup shredded Mozzarella cheese
- ⅓ cup grated Parmesan cheese
- 3 Tbsp fresh parsley, chopped
- 1 tsp Mitsides Vegetable Powder
- ½ tsp garlic powder
- Black pepper
For the Toppings
- 5-6 Tbsp Mitsides Napoletana Sauce
- 1 cup shredded Mozzarella cheese
- Fresh basil leaves
- Other toppings of your choice: cherry tomatoes, salami, ham, peppers etc.
Method
Preheat the oven to 200°C and line a baking sheet with parchment paper.
Steam the broccoli and cauliflower for about 6-7 minutes until soft. Transfer to a cutting board, and finely chop. Transfer to a cheese cloth or thin dish towel and squeeze to remove all the liquids.
In a large bowl, combine the broccoli, cauliflower, semolina, eggs, mozzarella, parmesan, parsley, garlic powder and vegetable powder. Add some pepper and mix well. Transfer the mixture to the baking sheet and gently spread it out evenly, packing it together to form a pizza shape. The crust should be about 1cm thick. Bake in the oven for 25 minutes or until golden brown.
Once the pizza crust is done, remove from the oven and spread the tomato sauce on top. Sprinkle evenly with the Mozzarella and other toppings and add some basil leaves. Put it back in the oven on broil for a few minutes or until the cheese turns golden brown.
