Ingredients
For 40 meatballs:
- 500g minced beef
- 1 egg, beaten
- 1 apple, grated
- 1 zucchini, grated
- 1 Tbsp parsley, chopped
- 1 Tbsp breadcrumbs
- 1 red onion, chopped
- ½ tsp garlic powder
- 1 tsp Mitsides Vegetable Powder
- 1 Tbsp olive oil
For the tomato sauce:
- 1 Mitsides Tomato passata 500g
- 1 garlic clove, minced
- 1 small onion, chopped
- 1 tsp Mitsides tomato paste
- 1 tsp raw honey or maple syrup
- 1 Tbsp basil, chopped
- 1 Tbsp olive oil
- 1 tsp Mitsides Vegetable Powder
- freshly ground pepper
Method
Preheat the oven to 180°C. To make the meatballs, put all ingredients in a bowl and mix well. Form small balls and place on a baking tray lined with baking paper. Bake in the oven for 20 minutes. Turn balls on the other side and bake for 15 more minutes.
Meanwhile, prepare the sauce. In a medium sized saucepan, heat the olive oil and add the onion and garlic. When softened, add the tomato paste, tomato passata, maple syrup, vegetable powder and pepper. Simmer on low heat for 15-20 minutes until sauce thickens. Take the pan off the heat, add the basil, stir well and season to taste. Add the meat balls to the sauce and serve with your child’s favorite pasta.
Note: Any remaining meatballs and tomato sauce can be stored in the freezer to be used within 2 months.
